Street food of Mumbai !! Yum Yum all I can say. The bhaji is made with all the vegetables that you have at home and it is eaten with Buns or pao. Yes,lots of butter gives it a delicious taste, but if you want to be conscious of your health, you could reduce the quantity of butter in this dish. I don’t use a lot of butter in my recipe also. Usually the pao’s or the buns are pan fried in the butter, so you could avoid that, and toast the buns with a little butter spread on it. Nevertheless, do make this dish, it’s definitely a good change from the usual cuisines. It only takes six minutes in Instapot, but if you do not own an Instapot you can make this on stovetop in a pan and simmer the bhaji till it is cooked and then you can mash it with a potato masher, might take about 15 minutes.

- Plug in the Instapot and turn on to saute mode high 15 mins. Add 2 tbsp of butter to the pot.

- Cancel the saute mode, add 1/2 cup of water to the insta pot, close the lid turn the valve to sealing. Switch on the pressure cook mode, high for six minutes.
- Once the pressure is done. Quick release the pressure.
- When the pressure is out open the lid, mash the vegetables with a potato masher. Add lemon juice and 1 or 2 tbspn of butter if desired. Add some water to adjust the consistency of the bhaji.

Notes
- Use your favorite vegetables to this dish. Some people use peas, but in my family no one likes peas so I have omitted it.
- If you do not have Pao bhaji masala, just add 2 tsp of coriander powder and 1 tspn of cummin powder.
What a great recipe! I didn’t have tomato paste or cabbage and used the masala substitute and it still turned out great.
