Sabudana Khichdi
Sabudana or Tapioca pearls are great source of energy and that is the reason it is mainly consumed by people in India when they are fasting.

Ingredients

Sabudana / Tapioca
(Washed and soaked for about 3 hours)

Peanuts

(To sprinkle on top)
Instructions

Wash the Sabudana with water for three four times, till the water almost comes out clean.

Soak the Sabudana in water, just enough to soak all the pearls. Keep checking to make sure its soaked as Sabudana would expand, add little water if needed. Soak it for about three hours or till it is soft when squeezed. Once soft strain all the water from it.

In a pan add oil and sauté the peanuts for a couple of minutes. Take them out once the peanuts are done.

In the same oil add onions and sauté it till little translucent. Then add tomatoes, green chili, curry leaves, salt and turmeric.

After couple of minutes add strained Sabudana to the onion and tomato mix. Cover and cook for a minute or so on medium heat. Sprinkle Coriander leaves and it is ready to eat.
