Poha (Flattened Rice Breakfast)

There are a lot of recipes to make Poha, every region has its own way to make Poha. As you know by now, I believe in the simplicity of the recipe and of course, a recipe that can be made in a hurry, this is a good one. I usually don't like to start cooking early in the morning, so when I have guests over this recipe helps me to prepare a fancy breakfast in a jiffy. You can add any vegetables, like cauliflower or peas to this if you like, I have only added potatoes to this one. In addition to the vegetables, you can add peanuts or coconut also as per your choice.

Ingredients
  • 2 cup Poha (Thick) (Flattened Rice)
  • 1 small Potato boiled (Chopped in small pieces)
  • 2 tbsp Onion (Finely Chopped)
  • 1/2 tsp Mustard Seeds
  • 1 small Serrano Pepper
  • Few Curry Leaves
  • 1 tsp Salt (Adjust it as per your taste)
  • 1/4 tsp Turmeric Powder
  • 1 tsp Lemon Juice
  • 1 tbsp Oil
Instructions
  1. Wash the Poha in a strainer thoroughly and let it sit in the strainer while you sauté the onions.
  2. In a pan add oil and turn the stove on.
  3. When it is hot add the mustard seeds.
  4. When the seeds start spluttering add the chopped onions with the curry leaves.
  5. As the onions turn translucent add the chopped potato, salt, serrano pepper and turmeric powder.
  6. After a couple of minutes add the wet poha to this and mix some lemon juice.
  7. Just three four minutes of sautéing on low heat covered, till everything is mixed well. If it starts sticking to the pan just sprinkle some water. Serve hot (Sprinkle some coriander leaves if you want).
