Mounk Ya Pa – Burmese Savoury Crepes

Let’s talk about street food from Burma. YUM!! is the word. Recently one of our relatives visited us and their wife, Rama showed me this amazingly easy recipe. In addition to the simplicity of the recipe, it is also very healthy and covers all essential nutrients. As far as the toppings are concerned you can use any toppings you like just like a pizza with variable recipes. Here, I am just using the traditional ingredients and how it is cooked in Burma. For the traditional way, dried white peas are used and they have to be soaked overnight and boiled to be used. It actually is a snack but we ate it as a light lunch, I will leave this up to you to decide what time of the day to eat this.

  • Mix Besan (Chickpea Flour) and rice flour in a bowl.
  • Add water and salt, the consistency should be like this as shown, depending on the besan you might have to adjust the water quantity. Leave it aside for at least an hour. You could add some chopped coriander leaves here or later as a topping.
  • While the mix is soaking you can get your toppings ready. Just mash lightly the soaked and boiled dried soya lentils or dried white peas.
  • Roast and grind the sesame seeds.
  • Chop the tomato finely.
  • Finely chop the spring onions, cilantro, and green chillis or jalapeno.
  • Take a flat pan and turn the stove on to heat it.
  • Once it is hot spread the mix as a crepe or dosa. Add oil so it does not stick to the pan. It will probably use about 2 to 3 tsp oil, more oil will definitely make it more crispy. Cook on medium flame.
  • Add all the toppings to it.
  • Cover it and let it cook for a couple of minutes.
  • Once it starts browning serve and enjoy!!
