Cha’s Choicest Akuri

When we were kids our favorite uncle made this for us. I actually did not know that Akuri is  a Parsi dish, I literally thought my uncle made this name up. He would add any vegetable, that he sees in the kitchen to this dish. In fact I recently found out that Akuri is a spicy scrambled egg Parsi dish eaten for breakfast. I have inherited this recipe from my uncle, he would feed us this every time and any time we got hungry in his house. It is really easy to make. I hope you enjoy this as much as we do.

  • Break all the eggs in a bowl and whip them together with salt, chili powder and water.
  • In a pan add oil and turn the heat on to medium high.
  • Add chopped onions to the oil with the Serrano peppers.
  • Once the onions are translucent add the chopped vegetables to the pan.
  • Saute the veges for a couple of minutes. Turn the heat to low medium and add the whisked eggs.
  • Keep stirring and when the eggs are almost cooked turn the heat off.
  • Serve it with pao or toast.

Notes

You can add any vegetables that you like to this for example cauliflower, mushrooms, tomatoes, different kinds of capsicums and or peas. Make it different every time with your vegetable variations !!!!
