Beetroot Raita / Yogurt
I just learned that this is pretty casual to make in Kerala. Beetroot is filled with health benefits. It is packed with essential nutrients and great source of fiber, iron and vitamin C. Beetroot juice is said to help in lowering blood pressure. Well, I just like the taste of this and I decided I should share this recipe with you.

Ingredients

Beetroot
(Boiled, peeled and shredded)

Plain Yogurt
(Whisked)

Onion Chopped

Mustard Seeds

Salt

1/2 inch piece
Ginger
(Chopped)

Dried Red Chili
Instructions

take the beetroot and shred thoroughly.

In a pan add the oil.

Add the mustard seeds. When the seeds start spluttering add onion, ginger, red chili and curry leaves.

After couple of minutes, when the chopped onion turns translucent add the beetroot.

Whisk the yogurt and add salt.

When the beetroot is sauteed for a couple of minutes add it to the whisked yogurt.

Mix it well and serve garnished with curry leaves.
