Aloo Frankie / Potato Frankie
Potato Frankie is a street food. This can be eaten as a snack to curb the hunger pangs in between meals or I usually eat it for dinner or lunch, when I get tired of the usual food. This is a welcome change. The good thing about this is its flexibility of the ingredients. There is really no hard and fast rule what should go in there as long as you cover all the food groups it would be a healthy change. Just like sandwich, add anything you want in this. Actually you can also use your left over roti's for this.

Ingredients
For the Potato filling

2 Medium
Potatoes
(Boiled and Mashed)

Serrano pepper
(As per your taste)

Coriander Powder

Uncooked tortillas or Roti

Oil for frying
Potato and tortilla
Toppings

Lettuce leaves or spinach leaves
Your preference

Chopped onion
White or red
Spreads

Mint chutney or tomato Ketchup
to spread
Instructions

In a pan add oil and turn the heat on.

Add the dried spices and the chopped serrano pepper.

Add the mashed potatoes to this oil.

Mix well and saute it for a couple of minutes.

Turn the heat off and let it cool down. Once it cools down form a cutlet shape and just saute in the same pan in about a tablespoon of oil, to make it crispy from both sides.

On a flat pan on the stove cook the uncooked tortillas or leftover rotis from both the sides.

For assembling, spread the ketchup or mint chutney on the tortilla.

Add the potato, leaves, onion and chili vinegar. You can also add anything here that you want just like you make a sandwich.

Roll it and enjoy.
