This is a high protein roll with paneer or if you want to add chicken strips instead of paneer that works too. This is a street food originated in Kolkata. Over the years it has seen a lot of variations, so the bottom-line is there is no hard and fast rule what should be filled in, this is just an idea and be creative with it, use all the leftovers. It is like a wrap and fill it in with raw or cooked food, whatever your heart desires. Love the flexibility here so you do not have to run to the grocery store when you decide to make this.

  • For the filling

  • To make the filling take a pan and add oil.
  • When hot add the chopped onions and sauté them till they are translucent.
  • Add the chopped capsicum and the scrambled paneer, sauté it and add salt .Turn the stove off when everything is mixed well.
  • Place a pan on the stove and when hot put the uncooked tortilla on it.
  • Whisk the egg and spread it on the tortilla turn the heat down to medium.
  • When the egg looks semi cooked, flip the tortilla.
  • When both sides are cooked turn the stove off and take it out on a plate.
  • Spread the chutney or ketchup or both, according to your taste.
  • Add the scrambled paneer and the vinegar chili and whatever else you want to add.
  • Roll it and enjoy!!
