Noodle Attho / Burmese Noodle Salad

Attho is basically a mixture, it could be made of rice, noodle etc. I really like the freshness in Burmese cuisine, since so many fresh ingredients are used, it gives the dish a refreshing taste and is good for a quick snack or a meal. Since most of the ingredients are in our pantry, all it comes to, is mixing them together. This dish can be served with soup (tomato or vegetable) as some people might think it is too dry. Since it gets really hot in summer, this dish might be a good option to cook and eat.

  • For the seasoning

  • Take a pan add besan in it. Turn the heat on to medium low to roast the besan.
  • Keep stirring till it is well roasted. Keep it aside.
  • To make the seasoning, in another little fry pan add the oil.
  • When it is hot, turn the flame down to medium, add the chopped garlic to the oil.
  • Once the garlic is slightly brown add the turmeric, chili powder and the sugar.
  • Turn the heat off and keep it aside.
  • In a mixing bowl take the boiled noodles.
  • Pour in the seasoning in the bowl with noodles and add salt with the roasted besan.
  • Add the shredded cabbage and the boiled potato to the noodles mix.
  • At this point you can add the chopped green onions and mix it well preferably with your washed hands. It helps in mixing everything evenly.
  • Mix in Cilantro and lemon juice.
  • Now you can mix the fried onions and chili oil.
  • Lastly, add the fried noodles so it does not loose its crunchiness. Serve and enjoy.
